Hervé This

Hervé This, born in 1955, is primarily a physico-chemist at INRAE ​​(special advisor) within Joint Research Unit (UMR) 0782. He is the Director of the INRAE-AgroParisTech International Centre of Molecular and Physical Gastronomy and a consulting professor at AgroParisTech. Hervé is the editor of two scientific journals (featuring an international editorial board, diamond open-access model, and double-blind peer review): Notes académiques de l’Académie d’agriculture de France and the International Journal of Molecular and Physical Gastronomy.
