Dr. Isabel Schäufele-Elbers is an assistant professor of agricultural and food economics, she focuses her research on consumer behavior and sustainability. Her research is dedicated to examining the gap between consumers’ positive attitudes towards sustainability and their actual behavior, known as the attitude-behavior gap. In her research, Isabel concentrates on three main areas: reducing meat consumption and the consumption of alternative proteins, reducing food waste, and the consumption of organic food.
